Matt Dean Pettit’s Muir Glen Fire Roasted Diced Tomatoes + Spinach Egg White Protein Bites

These protein bites are great quick and easy breakfast bites or the perfect after workout snacks that you can make ahead of time for a great healthy snack on the go.

Ingredient List

  • 10 large eggs
  • 1 tsp (15g) salt and fresh black pepper to taste
  • 1 tsp (15g) garlic powder
  • 1 tsp (15g) cayenne pepper, dried
  • 1 cup (250ml) Muir Glen™ Fire Roasted Diced Tomatoes
  • 1/2 cup (125ml) mushrooms, fresh and finely chopped
  • 2 cup (500ml) chopped spinach, finely chopped
  • 1 cup (250ml) aged cheddar cheese

Preparation

  1. Preheat oven to 400F. Line a 12 count muffin pan with silicone baking liners or coat with non-stick cooking spray.
  2. In a large bowl crack in eggs and whisk together with salt and black pepper.
  3. Whisk in garlic powder and cayenne until combined. Stir in the Muir Glen Fire Roasted Diced Tomatoes mushrooms, spinach and cheese. Divide evenly into muffin cups filling each about 2/3 full.
  4. Bake in preheated oven for 12-15 minutes, or until cooked through.
