Matt Dean Pettit’s Muir Glen Fire Roasted Diced Tomatoes + Spinach Egg White Protein Bites

These protein bites are great quick and easy breakfast bites or the perfect after workout snacks that you can make ahead of time for a great healthy snack on the go.


Ingredients

Serves 12-18

  • 10 large eggs
  • 1 tsp (15g) salt and fresh black pepper to taste
  • 1 tsp (15g) garlic powder
  • 1 tsp (15g) cayenne pepper, dried
  • 1 cup (250ml) Muir Glen Fire Roasted Diced Tomatoes
  • 1/2 cup (125ml) mushrooms, fresh and finely chopped
  • 2 cups (500ml) chopped spinach, finely chopped
  • 1 cup (250ml) aged cheddar cheese

Directions


  • Preheat oven to 400F. Line a 12 count muffin pan with silicone baking liners or coat with non-stick cooking spray.
  • In a large bowl crack in eggs and whisk together with salt and black pepper.
  • Whisk in garlic powder and cayenne until combined. Stir in the Muir Glen Fire Roasted Diced Tomatoes mushrooms, spinach and cheese. Divide evenly into muffin cups filling each about 2/3 full.
  • Bake in preheated oven for 12-15 minutes, or until cooked through.
